Description
Galangal has a ginger-like, lemony flavour that is somewhat reminiscent of camphor but is much milder, like ginger. In Europe, this spice is often used as a pepper substitute.
The scent of galangal is reminiscent of sweet mustard and ginger. Its flavour is spicy with a slightly bitter note.
Tips & Preparation:
- The Thai use galangal for almost all dishes. It is usually used fresh, replacing ginger in curries, soups and stews. The Thai chicken soup Tom Kha Gai or the Indonesian Satay are always made with this spice.
