Description
Star anise is undoubtedly the most beautiful spice on the market. Apart from its decorative properties, it tastes good too. The sweet flavour that is similar to fennel, but is slightly spicier, fits in well with sweet pastries and compotes. Star anise is a much more versatile spice than often assumed.
The star-shaped spice has a similar flavour to anise and fennel. In addition, it contains a strong liquorice flavour and bittersweet nuances.
Tips & Preparation:
Star anise provides sweet pastries and fruit compotes wonderful flavour. In China, star anise is added to soups, steamed chicken, pork and duck. In Vietnam, it is used for beef soup (Pho). Star anise rounds off the flavour of pumpkin, leek and root vegetables. Tip: star anise can be cooked over a long period of time. When cooking roast chicken, star anise seasoning is added to the inside of the chicken.
