Description
Vinberg's Pure Verjus Extra-Sour comes from Austria and is harvested early with only 3g sugar/100 ml. This gives it strong acidity and noticeable astringency. It is preferably used as a histamine-free alternative to vinegar and is best suited for salad marinades, with game and fish or for goulash and stews.
The high cost of materials, due to the low weight of the grapes at the time of harvest and the process steps required to extract the juice, give Verjus extra-sour a special position among the products on the market and make it a real rarity.
The advantages for the consumer are a high proportion of flavour-enhancing, natural tartaric acid, a polyphenol content that is far above that of red wine and economical use due to the strong acidity.
Verjus extra-sour is histamine-free, low in calories, vegan and free of preservatives.
